New Mommy Meals

Ahhh a new squishy baby. It seems to be happening all the time in my Mommy group. I love that our group is so great at just plain being there for our friends. I have to admit though with all these new babies coming along we have had tons of meal trains happening. We’ve done everything from take out, gift cards, dropping off meals and freezer meal parties.

I like to not overthink things and have something in my pocket I can count on and whip up the day before so I’d love to share with you my one and only Mommy Meal for New Moms.

If you’re one of my darling friends who has had a new baby you’ve gotten it or will get it. It’s also great for other occasions when you want to drop off a meal. I love it because it’s easy, it’s good and you can freeze it oh and leftover-yes.

I make a double batch at a time for the family and one for us at the same time!

Chicken and Rice Ingredients:

2-3 Boneless Skinless Chicken Breasts-thawed-although they can be a little frozen

1 Can of Cream of Chicken Soup

1 Bag of Minute Rice

1/2 Cup of Milk

4 Pats of Butter

Preheat the oven to 350. Grease a 2 Quart Dish-square or round works fine. I prefer Pyrex. In a bowl mix one bag of rice, soup and milk. Pour mixture into dish. Dice uncooked chicken. It is actually easier if it’s still a bit frozen and completely cooks in the oven so don’t worry. Place diced chicken evenly over the top of the rice mixture. Add pats of butter on top and salt and pepper. Bake for 45 minutes covered-done.

I usually cover this with foil and take in one of those disposable square pans. You can write on the foil with a sharpie cook time so they can pop it in the oven when they’re ready and you’re not rushing over during dinner time. It’s also great to freeze in case they have leftovers already. Top the meal off with some rolls, salad and a dessert and you’re good to go.

It’s so easy and tasty and makes for great leftovers. It’s also nice when you have a meal train come up to not have to think of something!

Crock Pot Salsa Chicken

Back to school isn’t just about sending your kiddos out the door. Everything changes. How you go to sleep, wake up, dress and cook. The day flies by and the kids are hungry and you’re exhausted. I love a good crock pot meal to make things easier. This one rocks and definitely makes leftovers. Not only leftovers but new meals-change it up!

Crock pot Salsa Chicken

Ingredients-4-6 chicken breast-oh and frozen is totally fine-that’s how I do it!

1 can of cream of chicken soup

1 can of either salsa OR rotel-we love rotel

1 cup sour-cream-get the low fat you’ll never know.

Mix the soup and salsa/rotel together in a bowl. Set your crock to low and drop the chicken in the bottom.  Pour the mixture over the top. Let it cook for roughly 4-5 hours. I stirred several times around the 3 and 4 hour mark. The chicken is done when it easily shreds with two forks. Once this is accomplished add in your cup of sour cream, mix and let simmer for about 10 minutes. Mix well. If you’re a cheese lover you can add that too. The recipe is really flavorful though.

We served ours on tortillas with some Spanish rice on the side. What I loved about this recipe is that it keeps really well. We had leftovers for a couple of days and it was good every time. You can easily put this in tupperware for lunch the next day over rice or with tortilla chips! The toddler liked it-enough said! How do you make getting back onto a schedule easier?
