So before I had a child I did this thing called I don’t wanna cook tonight. It was basically every night and poor hubby just basically had to fend for himself. Since Row has arrived I have to feed her so I had to get it into gear. I have these dreams of a monthly meal plan where I coupon my way to all the supplies and lovingly cook and clean home cooked meals every night while wearing an apron. I have the apron. So I have been working on slowly adding new items onto a list of meal we can rotate through to get to that holy grail known as ahhhhh the monthly meal plan. My first weapon of choice-the crockpot.
Stuffed Peppers are so easy and they’re good. You can basically mash anything in there-loads of veggies and no one even notices.
You’ll need:
4-6 green peppers
1/2 pound of ground beef-you can use turkey if you like
1 bag of instant rice uncooked
one whole medium onion diced
3-4 shakes of garlic salt
two handfuls of shredded cheese-your choice
veggies of choice-I do one cup of green beans and a whole tomato diced but go crazy-okra, asparagus,peas…you just do it
Cut the tops off the peppers and clean out-I like to pick the fat ones that sit up nicely.
Mix in a large bowl uncooked mean, rice, garlic salt, onions, and veggies.
Fill the peppers about 3/4 of the way with the mixture-you’ll need space for the growing rice.
Position the peppers in the middle of the crockput so they lean up against each other but so they’re not touching the sides of the crockpot.
Add about two cups of water to the bottom of the crock so the water covers the bottoms of the peppers. You can also add tomato paste one the tops of each pepper if you’d like at this time but we’re not big sauce people so I leave it out.
Cook on low for roughly 3-4 hours….when they’re almost done put some cheese on on the tops and leave cooking for about 5 more minutes.
These are amazing!!!!! So easy and everyone loved them.
I usually have left over mixture-freeze it! Use it next time!
