I love a good pancake…the fluffiness, the butteryness. I don’t know about you but sometimes coming up with new and EASY things to cook for a toddler aren’t always that easy. Here’s some fruit, here’s a different kind of fruit. Eggs-well she is allergic 🙁
Now I’ve told you I’m a pinterest fanatic and so you know I’ve pinned tons of pins onto my breakfast board-you have too. Don’t you just love your imaginary pinterest life. All the wonderful amazing things you’ve cooked. Oh and you totally have mason jars all over the house. Living your clean and beautiful and clutter less pinterest life!???
Sometimes I get brave and try pinterest ideas. This one was a keeper.
Pancake Bites-
Ingredients- your favorite pancake mix-store bought or homemade (oh and btw nobody cares if you home make everything or buy it :), chocolate chips, and cooking spray.
You’ll also need a mini muffin pan.
Set your oven to 350 degrees. Spray your mini muffin pan liberally with cooking spray. I like to use the baking cooking spray for these. Less greasy and pops right out. Mix your pancake mix and add in your chocolate chips. Scoop-I use a cookie scoop for these so easy!-one full scoop of pancake batter and drop into each mini muffin spot. Bake for 10 minutes or until fluffy.
These will pop right out-Cooking time and prep approximately 20 minutes. These are amazing! You can dip them into syrup or add powdered sugar like I did.
What I love about these is that 1. THEY’RE EASY. 2. You can add so many different kinds of things to them-strawberries, blueberries. 3.These are quite filling. 4. Easy for toddler and self feeding!
