Oreo Buttercream Iced Cupcakes

Oreo-there I said it….how do you eat them???? In everything! No seriously how do you? I like them to be stale-is that weird? I’m also a super fan of the colored ones. Let me stress colored ones not flavored ones. I like the Halloween ones because they’re orange and the spring ones because they’re blue. The color just makes them more full of awesomeness. Row-she likes to separate, eat the side without filling and then stick the side with filling straight onto the table-oh and push.

Row’s bake sale birthday party was full of bake sale goodness and these Oreo butter cream iced cupcakes made an appearance. Row actually helped with these. We dumped a whole bag of oreos in a ziploc and she smashed them….then I pulverized them. Yes I made sure Grandma was there so I could take a picture because notice what she is wielding is blurry-yep-ninja crushing skills.

Ingredients-and for those of my friends who love that butter cream I make-this is it!

1 stick of WHITE Crisco-that’s right people it’s soooo bad for you. It needs to be white or it will alter the color of the icing.

1 tbsp meringue powder-can be found at any craft store in the baking section

1 tsp. clear vanilla or almond extract-MUST BE CLEAR-or it will change the color too.  Craft stores are the easiest place to find this also.

1/2 pound of powdered sugar

1 tbsp water-

In a mixer blend the Crisco so it’s whipped, add all ingredients except the sugar and beat until smooth, add in sugar slowly. You can add more water later so it’s less thick but warning…..add the water slowly no more than 1 tsp. at a time because it thins quickly and you’ll basically have to add a whole other pound of sugar to get the consistency back. That’s your basic butter cream. For ours add the crushed oreos-I used a whole bag crushed.

You can use any chocolate cupcake recipe or box. You can also decorate your cupcakes by filling a ziploc bag and cutting the end off. However you won’t get the awesome look that you would by using a tip. Tips can be bought by themselves-one at a time at the craft store. I use the extra large tip for this recipe because of the cookie pieces.

These were yummy!!!!!

And just so you know I totally messed a couple of them up because a cookie would get caught in the tip as I was icing and then it would overload the process and them bam hubs was eating that one!

Which reminds me….this week in my mom’s group we talked about perfectionism and how it robs you of your joy. Isn’t that just so true. Especially coming from an actual perfectionist- me. Life is messy ya’ll and it’s ok….it’s like my icing sometimes things get jammed up and then bam you’re on your knees. And maybe you should be on your knees because that’s all you can do is pray and believe and hope.

May this month be a time of calm before the storm. If all else fails eat an oreo!
