Tis the season for events and cookie exchanges. I’m always on the lookout for new and GOOD cookie ideas. This one is a keeper.
Caramel Apple Pie Cookies-
Ingredients-
Ready made pie crust
Apple pie filling
Sugar
Cinnamon
Caramel-found either in the produce section by the apples or where they have the ice cream toppings-either will do.
Thaw your pie crusts-I buy and freeze.Roll one pie crust out and save one for the latticework top. Preheat your oven to 350 degrees. Spread caramel onto the flattened pie crust and smooth out just like you would pizza sauce. Add apple pie filling and spread out evenly. I used almost a whole can.
Now spread your other pie crust out on a cutting board and using a pizza cutter cut your pie crust into strips.
Lay your pie crust strips over your first pie crust with filling just as you would a pie in criss cross fashion.It should easily be enough to cover the whole pie crust. Using a biscuit cutter or glass cut our circular cookie shapes.
I put parchment paper on my cookie sheets so it was easier to remove the cookies once done because they will be a bit gooey. Add some sugar and cinnamon to the top of each cookie after moving them onto the cookie sheet.
Bake for 20-30 minutes or until golden brown.
These was super good and really easy-plus something different. I got about 14 cookies from the two pie crusts. Next time I’ll dice the apples up a bit smaller so it will be easier to cute the crust into cookies.
Make sure you package these cookies with wax paper separating the layers.
