Easy Peasy Poke Cake

I’ve been feeling the need to bake more often and try out new things! Apparently Row is feeling it because she has been asking to make cake most days. She helps with all the steps and mixing and putting in a little love. We love this poke cake because it’s easy. You can use any combination or variety so the combinations are endless. This last one we made was a cookies and cream poke cake.

Ingredients:

1 Box of Jello Instant Pudding Mix-the big box

1 Box of Cake Mix

You will also need milk for the pudding and eggs, water and oil for the cake mix as called on per the box recipe.

Mix your box cake using the recipe from the box. Bake your cake mix in a 9×13 pan. Allow to cool for twenty minutes. Once cool take a straw and poke holes throughout the cake-hence the name poke cake.

Mix your pudding using the recipe on the pudding box. Once the pudding has been mixed pour your pudding over the top of your cake to serve as the icing. Cover your cake and refrigerate for 2 hours before serving. Once the pudding sets you can either store the cake out of or in the fridge-whichever you prefer.

This cake is super easy and always tastes great! The pudding also helps keep the cake moist.

This one is definitely kid friendly to make and eat! Which kind would you make? We had chocolate cake and cookies and cream pudding-yum!

Crockpot S’mores Cake

It’s summertime! It’s S’mores time. My senior year in high school the summer after we graduated my friend Beckie and I literally made s’mores almost nightly at her parents house in the backyard with a mini bonfire. I would drive my car into the next town and every night we would roast and eat. I loved it. I love s’mores so much I have an entire Pinterest board full of s’mores recipes. I love trying new recipes out although I have to admit I almost always alter them…I may have a control issue.

S’mores Crockpot Cake

1 Box of chocolate cake mix

ingredients listed on your cake mix box

1 Box of graham crackers

1 Bag of Mini Marshmallows

1 cup of Chocolate Chips

Spray the inside if your crock pot with cooking spray. In a bowl mix the wet ingredients on your cake mix box with your cake mix box dry ingredients. Poor mix into crockpot. Add two layers of graham crackers-whole- on top of the cake mix,sprinkle the chocolate chips on top of the graham crackers, and add a layer of marshmallows covering the chocolate chips-I would be liberal with the mallows-the more the merrier.

Cook on low for 2.5-3 hours! The best kind of summer cooking is crock pot-no heat in your kitchen!

This was awesome and Row loved helping by throwing things in the crock. This cake would also taste great over ice cream. What’s you favorite summer treat?

Mini Easter Egg Cakes

We do tons of Toddler get togethers in our little group and I adore it. We also each bring a snack whether it’s a party or a play date and while grabbing something from the store is uber acceptable sometimes I like making something cute and it gives me a reason!

Our Easter play date was approaching and originally we weren’t going to be able to go due to speech therapy but we had a cancellation and bam we could go so I wanted something cute, sweet, quick and easy.I turned over to my trusty Pinterest board and found this amazingly cute idea on my Easter board from Food Recipes Online-their stuff is amazing. I will say of course you can make all of this from scratch but on the flip side you don’t have to.

Ingredients:

Pound Cake-how many depends on the size of your cookie cutter

Vanilla Icing-any kind but whipped 2 cans per cake

Food Coloring

 

Thaw out those pound cakes-you could also use sponge cake for a lighter feel but the pound cake holds together nicely. Using a break knife cut evenly lengthwise to create two equal halves.

Use your cookie cutter to cut out egg shapes. Pull apart.

Set up a drizzle station with a drying rack and a large cookie sheet under-with a lip.

Open up your icing and microwave for 20 seconds, stir, and microwave again until the icing become liquidy like a glaze.

Pour liberally over cakes.

Allow to dry-I needed to put these in the fridge to set due to our humid Texas climate.

Display in adorable cupcake liners and go.

You could use fondant and decorate them super cute like Food Recipes Online did and you could just pipesome lines on them with icing as well. I found the plain look did the job especially in a pinch. Cute and easy!
