Easy Peasy Poke Cake

I’ve been feeling the need to bake more often and try out new things! Apparently Row is feeling it because she has been asking to make cake most days. She helps with all the steps and mixing and putting in a little love. We love this poke cake because it’s easy. You can use any combination or variety so the combinations are endless. This last one we made was a cookies and cream poke cake.

Ingredients:

1 Box of Jello Instant Pudding Mix-the big box

1 Box of Cake Mix

You will also need milk for the pudding and eggs, water and oil for the cake mix as called on per the box recipe.

Mix your box cake using the recipe from the box. Bake your cake mix in a 9×13 pan. Allow to cool for twenty minutes. Once cool take a straw and poke holes throughout the cake-hence the name poke cake.

Mix your pudding using the recipe on the pudding box. Once the pudding has been mixed pour your pudding over the top of your cake to serve as the icing. Cover your cake and refrigerate for 2 hours before serving. Once the pudding sets you can either store the cake out of or in the fridge-whichever you prefer.

This cake is super easy and always tastes great! The pudding also helps keep the cake moist.

This one is definitely kid friendly to make and eat! Which kind would you make? We had chocolate cake and cookies and cream pudding-yum!

Crockpot Salisbury Steak

I have totally gotten on the crockpot bandwagon. More in an attempt to use mine more and last week it was 90 degrees outside. In MAY!!!! I love not having to crank the oven up and crank the AC down for summer and it’s nice to do little or no work for dinner and be done.

This one was an absolute keeper. I was skeptical and read several recipes online before ultimately altering and creating my own.

Crockpot Salisbury Steak-Cook time 2-3 hours

1 pound ground beef

1/2 cup bread crumbs of your choice

1 TBSP Salt

1 TBSP Pepper

1 Large Egg

1 Large Onion-diced

1 TBSP Cornstarch

1 Tbsp Water

1 Brown Gravy Package

1 Can Beef Broth

In a large bowl combine ground beef, salt, pepper, egg and bread crumbs. Combine thoroughly and form into patties-I easily made 4 patties.

In a skillet brown the patties-just on the outside-about 5 minutes-remove and place in the bottom of the crockpot. Remember you’re not cooking them just searing them.

In the same skillet add beef broth and bring to a boil, add in chopped onion. In a small bowl combine water and cornstarch and whisk together to form a paste-add to boiling skillet and mix-add in gravy packet mix until thoroughly mixed and pour over the top of your patties into your crockpot.

Cook on low for 2-3 hours-I did 3 hours. Serve over mashed potatoes. This was so good!!! You can easily double as well-great for leftovers. I’m also not a big gravy person myself but you can easily drain the gravy for less or add more when serving.

Breakfast For Dinner

I think so…. I myself love breakfast food. I also am not one of those get up before everyone else and cook kind of persons. They mentioned in my Ibloom moms group that we should get up about thirty minutes before our children so we can reflect and read the Bible. I’m all for reading the Bible. I’m not for getting up. I sleep until she’s up or I sit in my bed and stare in peace. Listen I laughed in my head of course.

I love a good breakfast casserole. At night! This sausage biscuit one-soo good. You will need…

Ingredients:

2 cans of buttermilk biscuits (most are 8 to a can)

Jimmy Dean pre cooked turkey sausage crumbles-you’ll thank me later

1 Cup grated cheddar cheese

1 Cup grated mozzarella cheese

8 Large Eggs

Preheat the oven to 350. Spray some cooking spray into a 9×14 pan. Open up the biscuits without scaring yourself completely. Line the bottom of the pan with your uncooked biscuits. Smoosh them together to create a sealed bottom layer.

Sprinkle on top of the biscuits your precooked sausage crumbles. This part was amazing-although you could cook a pound and crumble yourself. Sprinkle on top f the sausage both your cheddar and mozzarella cheeses.

Crack your eggs into a large bowl and whisk, I added a small dash of milk and salt and pepper. Once completely whisked pour eggs evenly over the 9×14 pan covering the entire pan-don’t leave dry parts. Cook for 40-45 minutes and enjoy!

This was so good!!! Everyone liked it and there were leftovers. We ate them for several days including breakfast the next day. I’m not a fan of turkey sausage but couldn’t tell one bit! Make sure you thoroughly whisk the eggs because I had some spots that seemed a bit under cooked because the eggs weren’t completely whisked.
