Homemade Creamsicle Pops

Listen friends I don’t know about you but summer is in full swing here in Texas and by full swing I mean ultra hot. We basically live in a rainforest and sweat from the moment we get up until the moment we go to sleep-and then in our sleep too.

So my toddler basically eats pepperoni and ice cream. We all know about the Blue Bell disaster of 2015. It has hit us hard. I’ve been looking at ways to get her to eat some variety!

I super love creamsicles…when we were little McDonald’s had a creamsicle shake and it was amazing…I mean so amazing. That dream is over. I decided to give it a try and make homemade creamsicle pops for my Row.

Ingredients-

orange juice

vanilla ice cream-we used vanilla bean

I left the ice cream out for about 5 minutes before making so that it would be more melty. I was hoping to attain an ice cream throughout pop instead of solid chunks and gobs of orange juice. Grab a plastic pop mold. Fill each mold with ice cream and orange juice alternating. Top off with orange juice at the end. That’s it! Two ingredients and not that bad!

Row was pretty pleased with them and ate a tiny bit in between her nightly water play. Row says-messy hair-don’t care.

Hunter Bear, Grandma and I ate one. I thought they came out pretty good. Oh and let’s not even play these were so beyond easy!

What I would have done….stuffed those babies with tons of ice cream next time and then poured the orange juice at the end. I liked having the ice cream a little melty because when you pour the orange juice into the mold the ice cream disperses more.

What flavor would you like to make?

On a side note I am completely jealous of my friend Jennifer because she has one of those super cool pops machines…I need one…

Frozen Yogurt Berries

My Row will eat something one day and change her mind about it the next. Please tell me other toddler moms are going through this? She use to eat yogurt everyday and now nothing. She is deeply in love with some ice cream though. I turned to my trusty pinterest and found a recipe for yogurt dipped fruit and though heyyyyyyy….I can do that with a twist! Frozen yogurt berries! Oh and any berry will do!

Ingredients-berries of choice-fresh

yogurt-vanilla-and you could totally change it up!

 

It’s so easy! Simply dip the berries into the yogurt. Make sure you cover them completely. I then scraped them off a bit because I didn’t want them completely drenched in yogurt. Just a light dip. I grabbed a cookie sheet and lined it with wax paper. Using a toothpick I plucked out the dipped berries and put them on the cookie sheet.

I was able to fit an entire box of raspberries on one cookie sheet. I stuck these bad boys in the freezer on the cookie sheet for about an hour and a half.

Then the moment of truth-toddler tester….

She likes it-she really likes it! She likes Life cereal as well! Sometimes the looks I get are nothing more than awesome.

The frozen yogurt raspberries are kind of amazing. Super healthy and tasty. The almost explode when you bit into them. She ate the entire batch in two days!!!! Next we’re doing blackberries! How do you get your toddler to eat?

Toddler Snacks-Easy Frozen Yogurt

IMG_0642Toddler snack,toddler snacks. It seems like everyone’s toddler either eats a ton or nothing at all. Row will eat just about everything but not a lot of it. Milk-please she only drank it in a bottle because it was in a bottle. So calcium is something I have to make sure she gets. We love the strawberry banana organic toddler yogurts. I really try to make sure her diary and meat are organic whenever possible. Mainly because one year I taught Kindergarten in the fifth grade hallway. The girls were hitting puberty in fourth grade. I would like to hold that off for the love of God and not eating things with growth hormone in them helps. BTW-this works just fine with regular yogurt too. 🙂 Oh and we eat junk food too.

I simply took a steak knife and slit a tiny slit in the yogurt container top and placed a baby sized fork in the slit. Popped it in the freezer. A couple of hours later I ran it under warm water to help pop it lose and bam chilled calcium rich treat! Row loved it. She’s kind of an ice cream fiend. It was a bit heavy for her so we ended up cutting some slivers off after awhile. She ate the whole thing!!!!

Simple, easy, different!

 

I also wanted to share from time to time simple things you can do at home to stimulate toddler learning. Behold a mirror. In Row’s room I have a mirror from Ikea-or you can get one of these bad boys at a garage sale. It’s as low to the ground as possible in her room. The great thing is she is able to self discover. Every time we have a play date children flock to it. Scientific discovery happens there everyday!

I hope you had an amazing Labor Day and good luck getting those babes back to school. Our local moms group Ibloom starts back next week and I can’t wait. If you have the time to join a mom’s group do so. I have met the most amazing women! After that week Kindermusik starts and don’t get me going about that. Have a wonderful Tuesday!
