The toddler Christmas party I hosted included a Christmas cookie exchange for the mamas! Each mama was asked to bring two dozen cookies of their choice and in return left with a two dozen variety of their choosing. I love to bake-cupcakes are what I’m best at but cookies are becoming a fast second in line.I love trying out new things-especially when they’re super fun! I scrolled through pinterest and found a recipe for Grinch cookies. I immediately chose them. I changed them just a bit.
Ingredients-
One box of french vanilla cake mix-or you can make from scratch.
Vegetable Oil-you can substitute applesauce if you wish!
Eggs
green food coloring
heart shaped sprinkles
powdered sugar
To make follow the directions on the cake mix and add green food coloring. Row helped with this! I also doubled the recipe because 1. I make a little my cookies a little on the big size and 2. I wanted to make sure I had enough for two dozen.
Chill batter in the refrigerator for roughly 15-20 minutes. Preheat the oven to 350 degrees. Line your cookie sheets with parchment paper or a silpat sheet-love those. You can also use baking spray but I prefer not to for cookies. Leaves a bit of an after taste. Pour some powdered sugar in a bowl.
Remove batter and scoop out roughly one tablespoon at a time, roll into a ball, drop into the powdered sugar, roll and cover-use this liberally.Put on the cookie sheet and press in the single heart sprinkle-right in the middle.
Bake for 8-10 minutes. Let firm for 2 minutes on the cookie sheet and then move to a cooling rack. These tasted really good because well they’re cake. Row approved and they were super cute. You could easily use this recipe for Valentine’s Day with pink or red batter!
